Host & History
From the small pension
to the 5*S Hotel Resort
The "Dollenberg fairy tale"
Once upon a time there was a poor little boy who lived on a hill in the deep Black Forest and dreamt of ... that's how fairy tales start. But the Dollenberg fairy tale is a real story – and the the little boy was dreaming of becoming the director of a luxury hotel.
Meinrad Schmiederer was a cook at first, then he completed an apprenticeship in hotel management at the legendary "Bühler Höhe". At just 21 years of age he took over the small boarding house with snack bar which his parents had started in the meantime. Out of that boarding house he created the 5*S Relais & Châteaux Hotel Resort which now can be found in all well-known hotel, restaurant and spa guides.
When fairy tales come true
Meanwhile, Meinrad Schmiederer has become a master chef and is struck by the exceptional talent of one of his cooking apprentices, Martin Herrmann. Fate wants Martin Herrmann to fall in love with Meinrad Schmiederer's sister and become part of the family. Martin Herrman cooks up the first and then the second of the much sought-after Michelin stars.
And so the dream of a little boy with irrepressible will, diligence and visionary courage has become a dream hotel that is highly appreciated by people who love cuisine and wellness, peace and nature. It was meant to be. Otherwise little Meinrad would probably not have been born into a family wtih a humble background, but which owned a hill with a fabulous panoramic view. The best place for a hotel like in a fairy tale.
